Pasta in White Sauce

Ingredients

  • 1. Pasta 1 Packet big
  • 2. Chicken Sausage 1 Packet / chicken breast pieces ½ kg
  • 3. Broccoli ½ kg
  • 4. Onions 2
  • 5. Tomatoes 2Nos.
  • 6. Parsley – As required
  • 7. Mushrooms – 1 Packet
  • 8. Olive Oil – As required
  • 9. Chilly flakes 1 spoon

White sauce
- Maida, Butter, Olive Oil, Milk 1 Ltr, Salt, pepper, mozralla cheese
Preparation:
To make White Sauce – Put a good amount of butter into a slightly hot pan. The butter starts melting, put little olive oil and keep the flame low. Once butter melts, put maida (all purpose flour) and stir. Now add milk slowly while stirring fast. You are bound to get lumps but do not give up! The trick is to not let the pan get too hot. If needed, turn off the flame and keep stirring until you lose all the lumps and occasionally turn on low flame. You have to have the flour cooked but if it gets too hot, it starts getting lumpy. Add salt and freshly ground pepper for last. You may add some mozralla cheese.
Preparation:
Heat the pan and add olive oil. Now add onions and sauté it. Throw in all ingredients and cook for 20 mins with a covered lid. Add salt and pepper/chilli flakes for taste and spice. After everything is cooked add the white sauce and let it sit for some time so it absorbs the flavor.
Boil the pasta
Finally mix pasta and the mixture in white sauce and serve hot with garlic bread on side.
Add finely chopped parsley to garnish.
Tricks
Cook white sauce in low flame and turn off flame to avoid lumping
Boil the pasta after preparing everything else. To avoid sticking of pasta, rinse the pasta in cold water before use.
You can use any vegetable of your choice but broccoli and mushrooms always complements pastas.

    • Garlic 3 Nos.
    • Tomato puree – 1 Can.
    • Tomato paste – 3 to 4 Nos.
    • Salt – As required
    • Pepper/ Chilly flakes – small quantities
