Ingredients :

  1. 1. 1.5 cups maida or all-purpose flourDSCF5893
  2. 2. ⅓ cup sooji /rava / fine semolina or ½ cup rice flour
  3. 3. 1 tbsp oil
  4. 4. 2 tsp sugar powder
  5. 5. Ajwain-1/2 tsp (optional)
  6. 6. ½ tsp salt or as required
  7. 7. ½ tsp baking Powder
  8. 8. 1 pinch baking soda
  9. 9. ½ cup yogurt/ dahi
  10. 10. Water for kneading as required
  11. 11. Oil for deep frying

Preparation :

  1. Take the maida, sugar powder, baking soda, baking powder, salt and sieve it together so that the all mixes evenly.
  2. Add the semolina /sooji and ajwain to the maida mixture. Add little oil and mix it once again.
  3. Add the yogurt and mix again well.
  4. Knead the above mixture adding required amount of water to make a soft dough.
  5. Keep aside the dough covering it with a wet napkin for 2 hours.
  6. After 2 hours make small to medium sized balls from the dough.
  7. Apply oil on the balls and Roll out the ball into round shape. The Bhaturas should neither be thick or thin.
  8. Heat oil in a deep pan for deep frying. When the oil is hot enough, place the rolled bhatura gently into the oil. Wait for few seconds and turn the bhatura with a spatula and press lightly to puff it up. Turn it once again till you get a light brown colour. Remove it when both sides are light brown colour and drain on kitchen paper towels.
  9. Using the same process make bhaturas with the dough.
  10. Serve the bhatura hot with Chole masala and onion rings.
