Aloo Tamatar in Peanut Mustard Gravy

IngredientsAloo Tamatar

1. Potato- 3 Nos ( cut into small cubes)
2. Tamato -3 Nos ( chopped)
3. Onion- 1 No
4. Ginger- 1 Tsp Chopped
5. Garlic-1 Tsp Chopped
6. Green Chilli- Chopped -2 Tsp
7. Turmeric Powder- ½ tsp
8. Water -2 1/2 cups
9. Salt to taste
10. Oil – 3 table spoon
11. Coriander leaves- 2 table spoon
12. Bay leaves -2 nos
For Gravy
1. Mustard -1 ½ Tsp
2. Peanut – Roasted 1 table spoon
3. Seseme seeds- 1 tsp
4. Kasuri Methi-1 tsp
5. Red Chilli- 2 nos
Soak the above in ½ cup water and grind it to smooth paste.

Preparation

1. Heat 2 table spoon of oil and fry the cubed potato till it is golden brown colour.
2. Heat the pressure cooker, add remaining oil add Bay leaves and fry. Add onion to it and saute for few minutes.
3. Add chopped ginger and garlic and saute till the raw smell disappears
4. Add chopped tomato and saute till it become mushy.
5. Add the ground paste and mix well and saute till oil comes to surface.
6. Add potato and mix well, add remaining water and pressure cook it for 2 whistle.
7. On cooling add the coriander leaves and serve with chapatti or white rice.
