Ingredients   Vellarikka Muringakka Curry

  1. Vellari – 250 gms – cubed into s mall size
  2. Drumstick – 1 no – Peeled and cut into 2 inch pieces
  3. Green chilly – 2 nos
  4. Chilli powder – ½ tsp
  5. Turmeric powder – 1 pinch
  6. Salt – as required
  7. Water – 1 cup or required to cook
  8. Coconut – grated – ½ cup
  9. Cumin seeds – 1 tsp
  10. Methi powder – ½ tsp
  11. Yoghurt – 4 -5 Tbs
  12. Coconut oil – 2 tsp
  13. Red chilly – 1
  14. Shallots – 1or 2
  15. Mustard seeds – 1 tsp
  16. Methi seeds- ½
  17. Curry leaves – 1 spring

Method

Mix all ingredients 1-7 in a Vessel and cook well. Make a fine paste with ingredients 8-10. Once the vegetable are cooked add the paste allow to cook for two minutes on slow fire. Once the water is dried and cooked well, off the fire and add beaten yoghurt and stir well. Temper with items 12 -17 and add to curry.
