Coconut Rice-Good
1. Coconut grated: 1.5 cup
2. Raw Rice (Basmati) : 2 cups
3. Curry leaves : 2-3 sprig
4. Oil- 2 table spoon
5. Cashew nut/ Peanut :- 5 to 10 nos
6. Urad Dal :- 2tsp
7. Mustard Seeds- 1tsp
8. Dry red chilli- 1-2 Nos
9. Salt to taste
1. Cook rice with salt and enough water to cook. Once it is ¾ cooked, drain the water and spread it. Add ½ cup fresh coconut and mix well.
2. Take a pan, heat oil add mustard seeds, urad dal and red chilli. Wait till the mustard sputter and urad dal turns to golden brown colour. Add cashew and 1 cup coconut and let it turn to golden brown coclour . Add curry leaves and mix well . Add rice to this mixture and mix well. Serve it with pickle or any chutney.
