Eggs 8 Nos.
Water 2 Tablespoons
Oilve Oil 2 Tablespoons
Red Onion 1 small
Broccoli 2 cups chopped and cooked
Salt as Required
Black pepper As required
Cheddar cheese ½ Cup shredded
Separate 4 of the eggs, Whites to a bowl (Discard yolks)
Add into it the remaining 4 eggs (whole) and tablespoons of water and whisk
Heat oil in a pan, add onion and cook till it begins to soften.
Add brococoli and for another 2 minutes. Season with salt and pepper.
Pour the egg mixture covering them. Reduce heat to low, cover and cook till the egg mixture has set around the edges, but liquid in the middle. Sprinkle cheese.
Preheat Oven and keep the pan to oven 1 or 2 minutes, be careful not to overcook or the egg mixture become tough.
Cut and serve hot.
