Mexican Chicken Soup

  • Canola Oil 2 Tabspoons
  • Onion 1 Medium
  • Celery 1 Medium rib
  • Garlic 2 Cloves (Minced)
  • Chilli powder 1 tablespoon
  • Cumin 1 spoon
  • Chicken broth 6 cups
  • Green chilli 2 Nos.
  • Corn 1 cup
  • Tomatoes 4 Nos. chopped
  • Oregano 1 spoon
  • Chicken breast 1 cup cooked
  • Cilantro ΒΌ cup chopped
  • Lime juice 1 lime
  • Black pepper As required
  • Salt As required


Heat Oil in a pan. Add Onion, Celery, Garlic and chilli Powder, cumin, and cook until the Onion softens.

Add chicken broth, boil and reduce the heat and simmer for 10 minutes. Add green chillies, corn, tomatoes and oregano and cook for another 5 minutes..

Take out the pan from heat and stir in the chicken, cilantro leaves, and lime juice.

Add salt and pepper as required.

Serve Hot
