Not many people outside Kerala are familiar with this root vegetable. In kerala many families grow Kavathu in their back yard.
- Kavathu ½ kg
- Mustard seeds 1 spoon
- Urad Dal ½ spoon
- Turmeric Powder ½ spoon
- Red chilli powder ½ spoon
- Green chillies 2 Nos.
- Curry leaves
- Salt As required
Wash kavathu in plenty of running water to remove all traces of soil. Scrape off the skin. Chop it into medium sized pieces. (Be careful to put some oil in your hand before starting the process. There is a tendency to feel scratch while cleaning)
Heat some oil in a pan. Add urad dal and mustard seeds. When the seeds pop, lower the heat and add the kavathu, turmeric powder, chilli powder, green chillies and salt. Add a little water and cover and cook until cook well. You will need to stir in between to make sure the kavathu don’t burn
serve with rice or for afternoon black tea
