Ingredients needed 

  • Raw rice – 1/2 cup
  • Toor dal – 1/2 cup
  • Bengal gram/channa dal – 1/2 cup
  • Split Yellow Lentils (moong dal) 1/2 cup
  • Urad Dal -1 table spoon
  • Green chilli -2 Or Red Chili -3-4 nos
  • Curry leaves
  • Cumin seeds- ½ tsp
  • Asafoetida/hing -1/4 tsp
  • Onion -2finely chopped
  • Curry leaves – 1 sprig
  • Oats- 1 cup
  • Drumstick leaves -handful (optional)
  • Salt as required
  • Oil for making adai ( sesame seed oil preferable)

Preparation

  1. Place the Toor dal, chana dal, urad dal, moong dal, and rice into a large bowl and cover with water ans soake it for 8 hours or overnight.
  2. Grind the soaked dal and rice with the salt and red chili or green chilli into a coarse paste .Add enough water to the mixture to make a batter just thin enough to spread.
  3. Add cumin seeds, hing,chopped onion, oats, curry leaves, drumstick leaves, into the batter.
  4. Heat a griddle (or a tawa) over medium heat. Gently grease the griddle with oil .Ladle the batter on the tawa and spread into a medium size circle using the back a large spoon. Cook for a few minutes and flip over to the other side. Cook a few more minutes, transfer to a plate, and serve immediately. As the Adas are best eaten hot with spicy chutney.
