Grilled Eggplant with peanut sauce

  1. Eggplant – 4 no. sliced into medium thick circles
  2. Sambar Powder ( or chili powder) -1 tsp
  3. Salt to taste

Peanut sauce

  1. Roasted Peanut- ½ cup
  2. Red chili- 3 Nos.
  3. Coriander Seeds- 1 table spoon
  4. Sesame seeds (white) -1 table spoon
  5. Amchoor powder- ½ tsp
  6. Jeera-1/2 tsp
  7. Hing- ¼ tsp
  8. Grated ginger-1/2 tsp
  9. Salt to taste

Dry roast all ingredients and make into a smooth paste using little water.

  • For Tadaka: Jeera/ curry leaves
  • For decoration: Coriander leaves chopped

Preparation:

  1. Marinate the Eggplant slices in sambar power and salt .
  2. Heat a pan and add little oil and grill the Eggplant slices both sides till it is golden colour
  3. Add little more oil. Sputter jeera add curry leaves and add the sauce and add ½ cup of water to Let it boil add the grilled eggplant and keep it covered for few minutes.  Or You can arrange the eggplant and pour the gravy over it
  4. Off the stove and plate the Eggplant and decorate with coriander leaves and serve with chapatti or white rice.
