Aamras or Amras is the pulp of the tropical fruit mango. The pulp of a ripe fruit is extracted usually by hand and consumed along with chapati/ Puri. At times ghee and milk are added to the pulp to enhance its flavour. Sugar is also added to adjust the sweetness.

Amras is a popular dessert in Gujarati homes, especially during festivities. and it is a must in their thali.


  • 3 cups Mango (ripe) , cut into pieces
  • 1/4 cup Water
  • Sugar , optional
  • Strings of Kesar

  1. To begin making the Gujarati Aamras, first get all the ingredients ready. Puree all the ingredients in a blender until smooth. Add extra sugar if you feel the ras needs more sweetness.
  2. Refrigerate and serve the Aam Ras chilled with puri and chola or even plain phulkas.
